SINIGANG is derived from the word "Sigang" which means "to stew". It is a classic filipino soup dish which is characterized by its sour taste from the sourness of native ingredients like tamarind. Different regions in the country uses souring agents like kamias (bilimbi), batuan, santol, calamansi and alibangbang leaves among others. Aside from pork, version of this dish are cooked with milkfish (bangus), shrimp, beef and chicken.
INGREDIENTS:
1 kg. Pork Meat (preferably Pork Belly)
1 pc. Gabi (Taro Corms)
2 pcs. Large Tomatoes
2 pcs. Onion
1 pc. Labanos (White Radish)
1 pc. Talong (Eggplant)
8 pcs. Okra
4 pcs. Yardlong Beans
3 pcs. Green Chili
1 bundle Kangkong (Water Spinach)
40 g. Sinigang mix
2 tbsp. Fish Sauce
1/2 tsp. Pepper
10 cups Water
