CHICKEN TINOLA is a traditional soup dish in the Philippines. It was even mentioned in one of Philippines national hero Jose Rizal's novel, the Noli Me Tangere, where it was served to a friend returning from a long stay in Europe. Its ginger-flavored broth helps boost the immune system and is often served during rainy or cold weather.
INGREDIENTS:
4 cloves Garlic (Bawang)
1 pc. large Onion (Sibuyas)
2 thumb size Ginger (Luya)
1 pc. Unripe Papaya
1 bundle Chili Leaves
3 pcs. Chili
1 kg. Chicken
3 tbsp. Oil
3 tbsp. Fish Sauce (Patis)
1/2 tsp. Peppercorn
8 cups Water
ALTERNATIVE INGREDIENTS:
Green Papaya - Sayote, Bottle Gourd (Upo)
Chili Leaves - Malunggay, Spinach, Pechay
Ginger - Lemon Grass (Tanglad)
