Mexican Nachos (Homemade)
Nacho’s are easy & delicious Mexican dish layered with kidney beans/Rajma, tomato salsa, olives, jalapeños, cheese sauce, sprinkled mozzarella cheese these are baked & served hot & crispy.
Ingredients
Nachos standard size pack
Handful black olives
Handful green olives
5-6 slices picked jalapeños
Block cheese
Mozzarella cheese
TO MAKE RAJMA/KIDNEY BEANS
-1 glass cooked beans
-1 tsp taco seasoning or (1/2 tsp cumin, 1/2 red chilli powder, salt) & pepper to taste.
-1 tsp Peri peri mix powder
-1 medium onion chopped
-2 tsp garlic paste
-2 tomatoes finely chopped
-1 tbsp hot sauce (sriracha)
-3 tbsp pizza sauce
-1 tbsp tomato ketchup
-3 tbsp oil
-white/red long Rajma/Kidney beans cleaned, soaked for 5-6 house, pressure cook until soft, drain the water and set aside
-Heat oil in a pan add onion sauté until onion are soft & slightly brown in color, add garlic paste stir allow raw smell to disappear, add dry spices mix stir for a second, add chopped tomatoes stir and cook until tomatoes are soft mushy.
-Pizza sauce, tomato ketchup, hot sauce stir & cook until oil separates from the masala
-Add cooked Rajma/kidney beans
Stir and cook for 1-2 minutes
-Turn off the flame & transfer to a bowl and set aside
TOTATO SALSA
-2 medium tomatoes finely chopped
-1 medium onion finely chopped
-1/2 lemon juice
-handful fresh mint & coriander leaves
-1 tbsp olive oil
-salt & pepper to taste
-Mix in a large bowl tomato, onion,
Mint & coriander leaves, salt & pepper squeeze lime juice mix, olive oil mix well and set aside
CHEESE SAUCE
-2 tbsp flour/Maida
-3 tbsp cheese spread
-3 tbsp butter
-1 tbsp olive oil
-Dash salt & pepper
-200 ml milk
-Mix in a bowl flour, milk, salt & pepper, milk whisk well
-Heat oil & butter add flour milk mixture stir well to combine until the sauce thickens mixing continuously (5 minutes)
-Once the sauce thickens add the cheese spread mix well until cheese melted
-turn off the flame , strain the sauce to get silky texture, adjust taste
-transfer to a bowl set aside
ASSEMBLING
-Arrange tortilla chips in a plate or baking try
-Spoon & spread the beans mixture on the chips
-Sprinkle the tomato salsa
-Sprinkle black & green olives, jalapeños
-Drizzle the cheese sauce all over
-Finally sprinkle grated cheese & mozzarella cheese.
-preheat the oven on at 180C
-bake Nachos for 10-15 minutes or until cheese melted
-once done remove baking try from the oven and enjoy!!!
