RECIPE
200 gms. carrots, chopped
100 gms. fenugreek, chopped
2 medium sized onions, chopped
4 tbs. oil
1 small red chilli
1/2 tsp turmeric powder
1 tsp. chilli powder
1/2 tsp ginger-garlic paste
1/2 tsp. green chilli paste
few seeds fenugreek
1/4 tsp. mustard seeds
1/4 tsp. cumin seeds
Few curry leaves
2-3 tbs juice of lemon
Salt to taste
METHOD
Heat oil, add red chilli, fenugreek and mustard seeds. When they crackle, add curry leaves, onions and salt. Cook till onions turn translucent, then add ginger-garlic paste. Saute' for a couple of minutes and add turmeric powder, chilli powder and green chilli paste. cook for a few minutes and add carrots. Cover with a lid and pour water over it. Cook till carrots turn soft. Add fenugreek leaves, cover with a lid , pour water over it and cook till oil is released. add juice of lime. Serve hot with chapatis.

It is for good for the eyes, heart. low in carbohydrates and starch is ideal in a weight loss diet.
