MASODI KI SABZI
Ingredients
For the chutney
40 gms. curry leaves 80 gms. coconut pieces
100 gms. ground nuts 100 gms. sesame seeds
10 gms. tamarind pulp 1 tsp. jaggery
15 gms. dry chilli salt to taste
For the Masodi
2 cups wheat flour 1/6 tsp. carom seeds
1/6 tsp. salt 1 tbs. oil
oil for frying
For the gravy
pulp of 2 medium tomatoes 2 medium onions
1tsp. ginger-garlic paste ½ tsp. turmeric. powder
¼ tsp. red chilli paste ¼ tsp. Kashmiri red chilli powder
½ tsp. green chilli paste 1 tsp. coconut powder
1tsp. groundnut powder 1 tsp. sesame powder
1tsp. Bojwar masala ½ tsp. mustard seeds
½ tsp. cumin seeds ¼ tsp. fenugreek seeds
Few curry leaves piece of red chilli
Salt to taste few mint leaves
Sprint of corriander leaves ¼ cup oil
Method
For the chutney, dry roast all the ingredients, except tamarind juice, and grind to a smooth paste. Add tamarind pulp, jaggery and little water, mix and transfer to a bowl.
Roll chapatti, spread the chutney, fold like for vegetable rolls and steam them. Cut them into squares pieces, deep fry and set aside.
Heat oil, add a piece of red chilli, few curry leaves, mustard seeds, cumin seeds, fenugreek seeds, when they splutter, add onions, salt and cook till the onions turn light pink. Add ginger - garlic paste, sauté, add turmeric powder, red chilli powder, Kashmiri red chilli powder, green chilli paste, sauté and add coconut powder, ground nut powder, sesame powder, Bojwar masala and sauté till oil floats. Add tomato puree, water and boil. Add mint leaves, corriander leaves and the masodi pieces and switch off the gas. Transfer to a bowl and garnish with corriander leaves.

Tomato is rich in vitamins C & K, folate, potassium and antioxidants - lycopene, Beta-carotene. Wheat is rich in B vitamins, iron, protein and fibre. Sesame is a good source of fibre, protein, minerals: – magnesium, calcium, manganese, zinc, iron, copper, selenium and vitamins: B1, B3, B6, E. Groundnuts are abundant in protein, healthy fats and dietary fibre. Groundnuts are immensely rich in potassium, calcium, phosphorus and B vitamins which offers you with a host of health benefits. Coconut is a highly nutritious fruit rich in fiber, vitamins, and minerals that supports heart health, improves digestion, and boosts metabolism.
