WEEKLY VEGAN MEAL PREP | LARGE FAMILY, FAMILY FRIENDLY RECIPES

We are meal prepping today for our plant based large family of 7! We made as much as we could in about 3 hours. Here are some of the recipes we made:

Baked Apple Pie Oatmeal
1 bottle of apple sauce (23oz)
2 tbsp vinegar
1 cup coconut sugar
1 can coconut milk (or any plant based milks)
1 1/2 cans of water
2 tbsp cinnamon, 1 tsp clove
6 cups rolled oats
1 tsp baking soda
Mix all wet ingredients then add dry ingredients in a large bowl. Bake in 9x9 baking dishes at 350 F for 45 mins. Enjoy!

Breakfast scones
4 bananas mashed
2 flax eggs ( 2 tbsp ground flax + 4 tbsp water)
1 cup sugar
1/2 cup almond flour
3 1/2 cup flour
1 tsp baking soda
Add ingredients in a bowl, mix add ins such as chopped nuts, chocolate chips, dried fruit. Mix just until flour has been incorporated, bake at 400 F for approx 12-15 mins until golden brown

Curry spice mix
You can totally use whatever you have but I like to add approx:
1 tbsp cumin, 1 tbsp smoked paprika, 1 tsp cardamom, 1 tsp fennel seeds, 1 tbsp black mustard seeds, 1 tsp garam masala, 1 tsp coriander

Short cut enchilada sauce
In a small pot add about 3-4 tbsp grapeseed oil, on medium heat toast 1 tbsp onion powder, 1 tbsp smoked paprika, 2 tbsp ancho chili powder, 1 tbsp oregano or Italian seasoning, 1 tbsp garlic powder. Add 1 small can of tomato paste and toast for about 1-2 mins.
Add water until sauce reaches your consistency
