Clafoutis is a French dessert that originates from the Limousin region. It typically consists of fruit, often cherries, arranged in a baking dish and covered with a batter similar to pancake batter.
Clafoutis is often dusted with icing sugar and can be served warm or at room temperature.
It's a very simple recipe with excellent results in the end. This pie ideal for those who prefer less sweetness in desserts and also enjoy dark chocolate. In two words, I can call it 'A simple exquisite pie.'

Ingredients:
250g cherries
2 eggs
2 egg yolks
40g cornflower
20g almond flour
60g brown sugar
60g 70% chocolate
30g heavy cream
5g Vanilla extract
1g Salt
Method:
Use fresh cherries; remove cherry stones and cut them into two pieces.
If you use frozen cherries, defrost and remove the liquid.
Melt chocolate and heavy cream (use short impulses in the microwave or create a water bath). Don't overcook the chocolate.
Mix eggs and yolks with sugar.
Add the chocolate mixture and mix until incorporated.
Add dry ingredients, mixing everything together.
Add cherries.
Place the mixture in a baking pan (I used a 16cm; 6 inches pan).
Bake at 175°C/350°F for approximately 35 minutes.
