Beef Bhuna Recipe Sehri Special Recipe
Ingredients
For Marination:
Mutton or Chicken – 1 kg (boneless or with bones)
Ginger Garlic Paste – 2 tbsp
Thecha / Green Chilli Paste – 2 tsp
Chicken Cube – 1
Turmeric Powder – 1 tsp
Salt – 1 tsp
Korma Masala or Biryani Masala – 3 tbsp
Kitchen King Masala or Garam masala powder– 3 tbsp
Oil – 2 tbsp
Fresh Coriander (Kotmeer) – lots, finely chopped
For Cooking:
Ghee – 3 tbsp
Oil – 1 tbsp
Jeera – 1 tsp
Shahi Jeera – 1 tsp
Whole Dry Red Chillies – 3 to 4
Onions – 5 to 6 medium, finely chopped
Salt – little, for frying onions
Tomatoes – 5 medium, chopped
Curd – 100 gms, blended
For Tawa Finish:
Iron Tawa
Ghee or Butter – little
Green Chillies – as required
Ginger – juliennes
Fresh Coriander – for garnish
Method
Step 1: Marination
Take 1 kg mutton or chicken in a bowl.
Add ginger garlic paste, thecha or green chilli paste, chicken cube, haldi, salt, korma or biryani masala, kitchen king masala, oil and lots of chopped coriander.
Mix everything well.
Cover and marinate for few hours or at least 30 minutes.
Step 2: Base Masala
Heat 3 tbsp ghee and 1 tbsp oil in a pressure cooker.
Add jeera, shahi jeera and whole red chillies. Let it splutter.
Add chopped onions and a little salt.
Fry till onions turn light brown.
Add chopped tomatoes and cook till moisture dries completely.
Step 3: Cooking Meat
Add marinated mutton or chicken.
Roast well on high flame.
Add blended curd and cook for few minutes.
Close the lid and pressure cook:
Mutton: 3–4 whistles (depending on meat quality)
Chicken: 1 whistle only or cook open in a pan
Give Coal Dhungaar for 5 minutes covering it
Step 4: Iron Tawa Finish
Heat an iron tawa with little ghee or butter.
Add green chillies and fry lightly.
Add prepared mutton or chicken gravy.
Cook for few minutes on high flame for smoky tawa flavour.
Step 5: Garnish & Serve
Garnish with ginger juliennes and fresh coriander.
Serve hot with Rumali Roti, Tandoori Roti, Parathas or Pav.
