🌽 Authentic Mahabaleshwar Corn Pattice Frankie
STEP 1 – Yellow Frankie Paratha (Slightly Thick, Soft)
Ingredients (12 Frankies)
2 cups maida( 500 gms)
1½ cup makki ka atta (maize flour)350 gms
2 tbsp ghee
½ tsp turmeric (for yellow colour)
2 tsp salt
Warm water or warm milk for kneading
2 tbsp oil
Method:
1. Mix maida + makki ka atta + haldi + salt + ghee.
2. Add warm water or milk and knead into a soft dough (slightly softer than roti dough).
Put oil and Knead and Cover
3. Rest for 20–25 minutes.
4. Roll parathas slightly thicker than regular chapatis.
5. Cook on tawa with very little oil/butter —
✔ Paratha should be yellow
✔ Soft and crispy
✔ Cook only until light brown spots appear evenly on both sides
STEP 2 – Corn & Potato Pattice
Ingredients:
2 cups boiled sweet corn (coarsely crushed)
6 medium boiled Potatoes ( 750 gms)
3 tbsp makki ka atta (for binding)
1 bread slice crushed OR 2 tbsp bread crumbs
2 inch ginger
7 to 8 Garlics
Green chillies 6 to 7
1 tsp black pepper powder
½ tsp garam masala
1 tsp chaat masala
1 tsp jeera pd
Salt to taste
Handful chopped coriander
Oil for shallow frying
Method:
1. In a bowl add crushed corn + mashed grated potatoes.
2. Add makki ka atta + bread crumbs for binding.
3. Mix in spices, ginger-garlic, chilli paste, coriander.
Mix everything well
4. Shape into round pattice like the Mahabaleshwar stalls and coat with maize flour.
You can Freeze them too and Keep in airtight container or Ziplock bags
Do Not Thaw before Frying after it's Freezed
5. Deep fry until golden & crispy on outside but soft inside.
This pattice is exactly what gives that signature flavour — soft, slightly sweet corn + potato with maize flour.
STEP 3 – Frankie Sauces & Garnish
Green Chutney
Take handful of Pudina,Kotmeer with Dantals,5 to 6 green chillies,1 inch ginger,5 garlics,1 tsp Chat Masala,1 tsp jeera pd,1 tsp black salt,1 tsp red chilli flakes,3 tbsp imli pulp made by heating imli with water for 5 minutes
Blend everything well with cold water
You Need:
Grated cheese
Tomato ketchup
Chopped sliced onions
Chaat masala
STEP 4 – Frankie Assembly
1. Place the yellow paratha on board.
2. Spread green chutney+ ketchup + Grated Cheese.
3. Place 2 hot corn-potato pattice in center.
4. Add chopped onions + chaat masala.
5. Roll tightly and serve warm
