What can I tell you? These are sweet ooey gooey squares. I cut them in about 1 inch (2.5 cm) squares. Great with a cup of tea or coffee. Total caramelized sugar rush! Recipe follows:
Dream Squares
Bake in a preheated 350°F (175°C) oven
Base 10 minutes, with topping 35 minutes
Cream together
1/2 cup (120 gm) butter or margarine
1/2 cup (125 ml) lightly- packed brown sugar
1/2 teaspoon (2 ml) vanilla
Stir in
1 cup (153 gm) all purpose flour (Canadian - strong or bread flour USA and UK)
Press into the bottom of an ungreased 8 inch square (20 cm x 20 cm) square cake pan (I used a 9 inch square (23 cm x 23 cm) square cake pan)
Bake in a preheated350°F (175 °C) oven for 10 minutes.
Meanwhile:
Beat
2 eggs
Blend in
1 cup (250 ml) lightly - packed brown sugar
Stir in
1 Tablespoon (15 ml) all purpose flour (Canadian - strong or bread flour USA and UK)
1/2 teaspoon (2 ml) baking powder
Pinch of salt
1 cup (250 ml) chopped pecans (or your favourite nuts)
1/2 cup (125 ml) glace cherries, quartered (I used a mix of red and green glace cherries)
1/2 cup (125 ml) desiccated coconut
Spread over the baked pastry - hot from the oven works well.
Return to oven and bake and additional 30 to 35 minutes or until golden.
Cool and cut into squares. Note: the texture of the squares change as they cool - this will make it easier to cut them when they are cool.
