STIR FRY SARDINE WITH POTATOES RECIPE
SARDIN-UBI KENTANG GORENG

Ingredients:
1 can sardine (large)
1 potato 🥔, cut into thick strips
½ tsp mustard seeds
2 red onions, sliced 🧅
2 tomatoes, cut into wedges 🍅
1 tsp ginger-garlic paste
1 tsp turmeric powder
½ - 1 tbsp cumin powder
2 tbsp plain chilli powder
3 tbsp thick tamarind juice
½ -1 lime 🍋🟩 (juice) - Optional
½ tsp brown sugar - Optional
3-4 fresh green chillies
Handful of fresh curry leaves
Handful of fresh coriander leaves
Salt and Seasoning powder to taste
Little water 💧
Oil for cooking
Method:
Heat up some oil in a wok/pan and fry the potatoes, ¾ cooked and set aside
Remove excess oil, then add in some mustard seeds, onions and fry for 1 minute.
Then, add in the tomatoes, curry leaves, spice powder, ginger-garlic paste and ½ cup water (200-250ml). Mix well.
Keep the flame medium-low. Pour in the sardine sauce mixture first. Add in the tamarind juice, salt, seasoning powder and sugar.
Allow it to cook, 2 minutes 👌
Now add in the sardine and fried potatoes. Squeeze in the lime juice. Blend everything together. It’s done!
Garnish with fresh coriander leaves and green chillies. Serve with hot rice and enjoy 😉
