Assam Pedas Ikan Pari
(Sour & Sour Stingray)

Ingredients:
Fresh stingray, cut into bite size (1 kg)
8-10 ladies fingers
1 big eggplant
1-2 tomatoes
4 lemongrass, crushed
4-5 kaffir lime leaves, lightly crushed
1-2 Torch Ginger Flowers (Bunga Kantan)
2-3 tbsp dry chilli paste
1 tbsp sugar (optional)
2 red onions, coarsely blended
Store bought assam-pedas paste
(I used 2 different brands, one spicier than the other)
500-550ml water (I blended the lemongrass stalks as a stock) Optional/or just use plain water
Salt and seasoning powder to taste
Oil for cooking
Steps:
Heat up a little oil over medium low flame and lightly stir fry the eggplants , ladies fingers and tomatoes for 2-3 minutes and set aside.
Then, add some oil and sauté the dry chilli paste together with the crushed lemongrass and lime leaves. Add some salt and seasoning powder.
Pour in the water and allow it to boil. Then, add in the sugar, fish slices, laksa leaves and allow it to cook.
Once it’s almost cooked, add in the store bought paste, more laksa leaves, sautéed vegetables and cook over medium high flame for another 2-3 minutes. Add in the sliced bunga kantan. Turn off the flame 👌
Serve with hot rice and enjoy ☺️
