Here's the recipe:
Ingredients
60g unsalted butter
185g golden caster sugar
3 eggs separated
1 tsp grated lemon (about 1 large lemon)
60ml lemon juice
40g self-raising flour
2 tsp lemon extract
185ml milk
3 tbsp golden caster sugar
Icing sugar, to dust
Method
1. Preheat the oven to 180°C/fan 160°C/gas mark 4. Grease 6 individual ovenproof ramekins.
2. Beat the butter, sugar and egg yolks in a bowl until the mixture is light and creamy. Add the zest and lemon juice, then add the flour and stir until just combined. Add the lemon extract and milk and mix.
3. Place the egg whites in a clean, dry bowl with 2 tablespoons golden caster sugar. Whisk until firm peaks form then fold into the pudding mixture with a metal whisk until combined.
4. Spoon into the ovenproof ramekins and place them in a deep baking tin. Pour in boiling water to come one-third of the way up the sides of the ramekins.
5. Bake the puddings for 25-30 minutes until risen, then dust with icing sugar and serve immediately.
