I start with a gourmet Lemon Meringue Cupcake—soft vanilla sponge perfumed with zest and secret nuggets of candied lemon, filled with silky homemade lemon curd, and crowned with marshmallowy Italian meringue that’s lightly torched for a golden finish. Then our Bake Club guests—four teachers from Yorkshire—tackle two brand-new recipes: a flambéed roasted pineapple cupcake drenched in amaretto caramel and finished with whipped cream, and a Tiramisu cupcake soaked with amaretto and topped with a mascarpone–Marsala frosting. I guide, I judge, and I pass on the little techniques that make a big difference, from foil cases that keep sponges moist to safe flambéing and perfect piping.

Out of the kitchen, I’m commissioned to create bespoke designer cupcakes for the grand opening of Harrods’ new Shoe Heaven in Knightsbridge during London Fashion Week. Shoes and cakes are a match made in heaven, so we go all-out with couture details, sculpted mini stilettos and glossy finishes worthy of the runway—an edible homage to icons like Louboutin.
