🥦 Sarso Vilayati phool
Ingredients
• Broccoli florets – 2 cups
• Fresh cream (malai) – ½ cup
• Mustard paste (sarson) – 1½ tbsp
(use yellow/black mustard seeds soaked & ground)
• Cashew paste – 2 tbsp (optional, for extra creaminess)
• Ginger-garlic paste – 1 tsp
• Green chilies – 1–2 (paste or finely chopped)
• Mustard oil – 1 tbsp
• Butter – 1 tbsp
• Turmeric powder – ¼ tsp
• Black pepper powder – ½ tsp
• Garam masala – ¼ tsp
• Lemon juice – 1 tsp
• Salt – to taste
• Kasuri methi – ½ tsp (optional)

Preparation
1. Blanch the broccoli
• Boil water with salt.
• Add broccoli florets and blanch for 2–3 minutes.
• Drain and keep aside.
2. Prepare mustard paste
• Soak mustard seeds in warm water for 15 minutes.
• Grind with a little water and green chilies to a smooth paste.
3. Cook the base
• Heat mustard oil in a pan till it smokes lightly.
• Lower heat, add butter.
• Add ginger-garlic paste and sauté till aromatic.
4. Make the gravy
• Add mustard paste and cook on low flame for 2–3 minutes (important to remove bitterness).
• Add turmeric, pepper, salt, and cashew paste. Mix well.
5. Add cream & broccoli
• Stir in fresh cream and a little water if needed.
• Add broccoli florets and gently mix.
• Cover and cook on low heat for 4–5 minutes.
6. Finish
• Sprinkle garam masala, kasuri methi, and lemon juice.
• Switch off heat.
