Pastrmalija is a traditional Macedonian pizza, originally made with dried smoked meat such as pork, mutton or lamb. Simple in ingredients but packed with flavour - you'll understand why villages in Macedonia compete to see who makes the best when you make this!
YOU NEED FOR THE MEAT:
800 - 900 g of pork shoulder (cut in small cubes)
2 tbsp. of smokey paprika
1tsp of cayenne pepper
crushed chili flakes to taste
salt and pepper to taste
2 tsp of garlic granules or powder (optional)
small drizzle of olive oil
FOR THE DOUGH YOU NEED:
4 cups of all purpose flour (more or less depending on your texture)
small bowl of warm water, 1 sachet of dry active yeast, and 1 tsp of sugar
tsp of salt
warm water to added gradually as needed
2 tsp of oil
ALSO - 3 pads of pork lard or butter for cooking once assembled
Melted butter brushed on crusts once removed from oven
OPTIONAL TOPPINGS:
egg beaten, or whole egg(s) cracked on top
GARNISH:
Feferoni (small pickled hot peppers you can buy in a jar)
