Ingredients:
180 g pumpkin puree (store-bought or homemade)
3 tbsp peanut powder (or peanut butter)
2 tbsp unsweetened cocoa powder
4 tbsp protein powder (optional)
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp cinnamon
1 tbsp stevia (or adjust to taste)
2 g butter (for greasing)
Instructions:
1. Prepare your pumpkin puree by boiling peeled and chopped pumpkin until soft, then mashing or blending it.
2. In a bowl, mix 180 g of pumpkin puree with 3 tbsp of peanut powder until smooth.
3. Add 2 tbsp unsweetened cocoa powder, 4 tbsp protein powder (optional), 1/2 tsp salt, 1/2 tsp baking powder, and 1/2 tsp cinnamon. Stir until the batter is smooth.
4. Sweeten with 1 tbsp stevia, and mix again.
5. Line a baking pan with parchment paper and lightly grease with 2 g of butter.
6. Pour the brownie batter into the pan and bake at 350°F (180°C) for 20-30 minutes, until the top is set and crispy.
7. Let cool, then enjoy your rich, chocolatey, and guilt-free brownies!
