Khichda Recipe
Ingredients
Whole spices (to be ground):
Jeera
Shah jeera
Cinnamon
Black pepper
Star anise
Bay leaves
Cloves
Green cardamom
Black cardamom
For mutton:
Mutton – 1 kg
Ginger-garlic paste
Chopped onions
Green chilli paste
Salt (to taste)
Oil
Water
For grains & pulses:
Whole wheat (khichda wheat)
Safed urad dal
Toor dal
Masoor dal
Chana dal
Other ingredients:
Chopped tomatoes
Turmeric powder
Kashmiri red chilli powder
Red chilli powder
Garam masala powder
Dhaniya (coriander) powder
Jeera powder
Fried onions
Chopped mint (pudina)
Chopped coriander leaves
Oil
Water
Method
Prepare the mutton:
Grind all the whole spices into a fine powder.
In a pressure cooker, add mutton, ground spice powder, ginger-garlic paste, chopped onions, green chilli paste, salt, oil and water.
Pressure cook until the mutton is soft and well cooked. Keep aside along with the stock.
Prepare grains and pulses:
Wash whole wheat and all dals thoroughly. Soak them together in water for 1 hour.
Cook grains and pulses:
In another cooker, add soaked wheat and dals, chopped tomatoes, turmeric powder, salt, oil and sufficient water.
Pressure cook until everything is completely soft and mushy.
Final tempering:
Heat oil in a large heavy-bottom utensil.
Add ginger-garlic paste and sauté well.
Add Kashmiri red chilli powder, red chilli powder, garam masala and dhaniya powder. Fry until oil separates.
Combine everything:
Add the cooked mutton along with its stock. Mix well and cook for a few minutes.
Now add the cooked grains and pulses. Mix thoroughly and cook on low flame until well blended.
Final touch:
Add fried onions, chopped mint, chopped coriander, jeera powder and a little garam masala powder.
Mix well and cook for a few more minutes.
Serve hot:
Serve hot Khichda with lemon wedges, sliced onions and green chutney.
