🥣 Chicken Marinade
• 1 & ½ cup Greek yogurt
• 1 tbsp Kashmiri red chilli powder
• 1 tsp cumin powder
• 1 tsp chicken masala
• Salt to taste
• 1 tbsp ginger paste
• 1 tbsp garlic paste
• 1 tbsp lemon juice
• Chicken pieces
Mix everything well, coat the chicken, and marinate for 30 minutes to 1 hour.

🌱 Spinach Cashew Gravy
Blend until smooth:
• 1 cup boiled spinach
• 1 cup cilantro
• ½ cup mint leaves
• 2 green chillies
• 8–10 soaked cashews
• 2–3 tbsp water
This creates a naturally creamy, vibrant green gravy without using cream.

🍚 Basmati Rice
• ½ cup basmati rice (soaked for 20 minutes)
Cook rice in boiling water with:
• Ghee
• Jeera (cumin seeds)
• Green chilli
• Cardamom
• Lemon slice
• Salt
Cook for 12–15 minutes until rice is just done and grains are separate.

🍲 Assemble the Biryani
1. Heat 2 tbsp oil + 1 tbsp ghee in a pot
2. Add thinly sliced onion, bay leaf, cumin seeds & green chilli
3. Sauté until aromatic
4. Add marinated chicken and cook briefly
5. Add spinach cashew gravy and simmer
6. Layer cooked rice on top
7. Cover and cook on low heat until fragrant and fluffy ✨
