This creamy spinach ricotta gnocchi is made using store-bought gnocchi and a silky green sauce with ricotta cheese, Greek yogurt, fresh spinach, lemon, and garlic.
It’s rich, comforting, and flavorful — without using heavy cream.

🥬 INGREDIENTS (Serves 2–3)
For the gnocchi
• 900 g ready-made gnocchi
• Water
• ½ tsp salt
• 1 tsp olive oil
For the creamy spinach ricotta sauce
• 1 cup ricotta cheese
• ⅓ cup Greek yogurt
• 1 cup fresh spinach
• 2 basil leaves
• Juice of ½ lemon
• 1 tsp salt
• ½ tsp black pepper
• 1 tsp olive oil
• 1 tsp garlic paste
• 4 tbsp reserved pasta water
For garnish
• Lemon zest
• Chili flakes
• Parmesan cheese
• Fresh basil
• Olive oil drizzle

🍳 HOW TO MAKE
1️⃣ Bring a pot of water to boil. Add salt and olive oil.
2️⃣ Add gnocchi and cook for 1 minute. Drain and reserve pasta water.
3️⃣ In a blender, add ricotta, Greek yogurt, spinach, basil, lemon juice, salt, pepper, olive oil, garlic paste, and pasta water. Blend until smooth.
4️⃣ Heat olive oil in a pan, add the sauce, and cook for 2 minutes. Add lemon zest.
5️⃣ Add cooked gnocchi, toss well, and cook for another 2 minutes until creamy.
6️⃣ Serve hot with parmesan, chili flakes, basil, lemon zest, and olive oil.
