🥣 Step 1: Ingredients
For Dough
2 cups Maida
2 tbsp Oil / Ghee
Salt to taste
Water (as needed)
For Stuffing
2 boiled Potatoes (mashed)
½ cup Green Peas (boiled & lightly mashed)
1 tsp Oil
½ tsp Cumin seeds
1 tsp Ginger-green chilli paste
½ tsp Turmeric powder
1 tsp Red chilli powder
1 tsp Coriander powder
½ tsp Garam masala
Salt to taste
2 tbsp Coriander leaves
½ tsp Amchur / Lemon juice
🍞 Step 2: Prepare the Dough
Take maida in a bowl
Add salt & oil/ghee
Mix well till crumb-like texture
Add little water & knead tight dough
Cover & rest for 20 minutes
🌶️ Step 3: Make Potato Peas Stuffing
Heat oil in a pan
Add cumin seeds – let them crackle
Add ginger-chilli paste & sauté
Add peas, potatoes & mix well
Add all spices & salt
Cook for 2–3 minutes
Add coriander leaves & lemon juice
Cool the mixture completely
🥟 Step 4: Shape the Kachori
Divide dough into small balls
Roll slightly thick puri
Add 1 tbsp stuffing in center
Seal edges carefully
Flatten gently (don’t make thin)
🔥 Step 5: Frying
Heat oil on low–medium flame
Add kachori slowly
Fry on low flame till puffed
Increase flame slightly & fry till golden
Remove & drain on tissue paper
🍽️ Step 6: Serve
Serve hot Aloo Matar Kachori with
✔️ Green chutney
✔️ Tamarind chutney
✔️ Hot tea ☕
💡 Tips for Crispy Kachori
Dough must be tight
Stuffing should be completely cool
Always fry on low flame first
