Anda Masala Pav or Egg Pav Bhaji is an Indian street food dish that originated in Maharashtra. This is the Mumbai Style Anda Masala Pav which is flavorsome and a hearty meal. Pav or bread is toasted in butter and served with mashed vegetables & roughly chopped boiled eggs seasoned with pav bhaji masala and a generous amount of butter. Boiled eggs give the creamy and thick texture which is the key element for this pav bhaji. Capsicum gives a wonderful flavor to this recipe. You can use grated carrots and other vegetables of your choice in this dish. But I have used only onions and tomatoes in this recipe. Each one has their own choice. Do not use potatoes as we are using boiled eggs instead.
This homemade Anda Masala Pav taste absolutely phenomenal and your family will definitely enjoy it.
So here's the recipe from my kitchen to yours.

Ingredients :
5 nos. Boiled Eggs (roughly chopped)
1 tbsp Butter
1 tbsp Ghee
2 large Onions (finely chopped)
2 Green Chillies (finely chopped)
1 tsp Ginger Garlic Paste
3 medium Tomatoes (finely chopped)
Salt as per taste
1/4 tsp Sugar
1 medium sized Capsicum (finely chopped)
1 tbsp Kashmiri Red Chilli Powder
1/2 tsp Garam Masala Powder
1/2 tsp Turmeric Powder
1/2 tsp Cumin Powder (Jeera Powder)
1 tbsp Pav Bhaji Masala Powder
50 ml Water (or as per your requirement)
2 to 3 tbsp Coriander Leaves
For the Pav :
1 tbsp Butter
1/4 tsp Kashmiri Red Chilli Powder
1/4 tsp Pav Bhaji Masala Pav
little coriander leaves
Note : tsp is teaspoon
tbsp is tablespoon
