South Indian Style Egg Curry with Vegetables | How to make Egg Curry with Cauliflower & Potato
Bring South India and its incredible flavors to your table with this South Indian style Egg Curry with Vegetables. A few spices, onions, tomatoes and grated coconut make this utterly satisfying and comforting egg curry recipe that tastes best with appams, parottas (flatbread) or steamed rice. Make extra portions because everyone will go for multiple servings!
Here I have chosen cauliflower, potatoes and green peas as my choice of vegetables. Even a cauliflower-hater will love the warm coconut and rich flavours of this vegetarian curry dish.
Important Note :
1. If you don't like cauliflower you can use your choice of vegetables in this recipe. (like carrots, french beans). But as per me this curry will taste good with this combination of vegetables only.
2. Please use freshly grated coconut for this recipe instead of coconut milk.
Ingredients
For the Masala :
1 tbsp Ghee
2 tbsp Vegetable Oil
1 large Onion sliced
8 to 10 cloves of Garlic (medium size)
7 to 8 large sized Dried Kashmiri Red Chillies
1 tbsp Coriander Seeds
½ tsp Peppercorns
1 tsp Fennel Seeds (saunf)
400 gms Coconut (freshly grated)
½ tsp Turmeric Powder
1 tsp Garam Masala Powder
Water as per requirement for grinding
Other Ingredients
2 tbsp Vegetable Oil
2 medium sized Potatoes (cut into big cubes)
300 gms Cauliflower (big florets)
1 large Tomato (cut into big pieces)
¼ cup Peas (I have used frozen peas)
500 ml Water (or as per your requirement)
½ tsp Salt (or as per taste)
6 boiled Eggs (one slit given on each egg)
Tempering/Tadka :
½ portion Onion (sliced)
1 tsp Mustard Seeds (Rai)
2 sprigs Curry Leaves
