Ingredients for Zucchini Cutlets:
• Zucchini: 3 large
• Grated garlic: 3 cloves
• Medium onion: 1
• Eggs: 4
• Breadcrumbs or wheat flour: 2 tablespoons
• Brewed saffron: a little
• Salt, black pepper, and turmeric: as needed
• Paprika powder: a little
Zucchini Cutlet (Kuku Kadoo) Recipe
Step 1:
Peel the onion and dice it finely. Sauté it in a little oil until golden and soft. Once the onions are light and golden, add the garlic and stir for a few seconds.
Step 2:
Trim the ends of the zucchinis and grate them with the skin on. Squeeze out the excess water from the zucchini using your hands. Then, mix the sautéed onions, breadcrumbs, eggs, garlic powder, paprika, salt, black pepper, turmeric, and brewed saffron with the zucchini. Stir well until combined.
Step 3:
Heat a frying pan over medium heat and pour in some oil. Spread the zucchini mixture evenly in the pan.
Final Step:
Cover the pan and let the cutlet cook through. Once one side is golden and cooked, carefully flip it to cook the other side without covering the pan, until both sides are nicely fried
