Khoresht Mast (Persian Saffron Yogurt Dessert – Isfahan Style)
Ingredients
• Lamb neck meat: 500 g
• Thick strained yogurt (without whey): 1 kg
• Sugar: 4 cups
• Ground saffron: 2 g
• Barberries and ground pistachios for garnish

Instructions
1. Prepare the saffron yogurt
• Place the thick strained yogurt in a large bowl.
• Add the sugar and mix well with a whisk.
• Add saffron brewed with ice (for a richer color) and mix until smooth and uniform.
2. Cook and shred the meat
• Cook the lamb neck meat with a little water and simple spices until very tender.
• Remove the bones and finely shred the meat.
3. Combine the meat and yogurt
• Gradually add the saffron yogurt mixture to the shredded meat.
• Mix with your hand or a spatula until the mixture becomes smooth and slightly elastic.
4. Serve and garnish
• Transfer the mixture to a serving dish.
• Garnish the top with barberries and ground pistachios.
