Pollo Loco Chicken Marinade:
• 1 whole chicken, 4-5 lb, spatchcocked
• 1/2 cup orange juice, no added sugar
• 1/2 cup pineapple juice, no added sugar
• 1/4 cup lime juice
• 5 tsp minced garlic (5 cloves)
• 1 tsp whole peppercorns (or ground pepper)
• 2 tsp ground ancho chile (or just regular chili powder)
• 1 tsp smoked paprika (hot if you got it)
• 2 tsp onion powder
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1 tsp dry Mexican oregano
• 1/2 tsp ground turmeric
• 1/4 cup olive oil
• 2 tsp kosher salt
• freshly ground black pepper, to taste

Spatchcock the chicken (see link above) and place in 1 gallon ziplock bag. Mix marinade ingredients in a bowl or large measuring cup and then dump into ziplock bag, coating the chicken well. Marinate the chicken overnight in the refrigerator.

Pollo Loco Chicken Spice Rub:
• 1/2 tsp onion powder
• 1/2 tsp garlic powder
• 1/2 tsp smoked paprika
• 1 tsp kosher salt

Stove Top Mac & Cheese:
• 8 oz elbow macaroni
• 4 tbsp butter
• 2 eggs
• 6 oz evaporated milk
• 1/2 tsp hot sauce (I use Sriracha)
• 1 tsp kosher salt
• Fresh black pepper, to taste
• 3/4 tsp dry mustard powder
• 10 oz sharp cheddar, shredded

Steamed Veggies:
• 16 oz bag California Blend frozen vegetables
• 2 tbsp butter
• 1/4 tsp Ms. Dash Original seasoning, or to taste
• Kosher salt and coarse ground black pepper, to taste
