Chicken Parmesan:
4 skinless, boneless chicken breast halves or thighs, 1 lb (I used 2 12 oz breasts, cut in half)
salt and freshly ground black pepper to taste
2 large eggs
1 cup panko bread crumbs, or more as needed
3⁄4 cup grated Parmesan cheese, divided
1 tsp italian seasoning
½ tsp granulated garlic
2 tbsp all-purpose flour, or more if needed
1⁄2 cup vegetable oil for frying, or as needed
1⁄2 cup prepared tomato (marinara) sauce
1⁄2 cup grated mozzarella cheese
1⁄4 cup chopped fresh basil or dried basil
3-4 slices provolone cheese
4 tsp olive oil

Marinara Sauce (I make a half recipe of this, or you could use a jar from the store):
2 tbsp extra-virgin olive oil
1 medium onion, chopped
8 oz fresh mushrooms or 4 oz can, sliced (optional)
½ to 1 bell pepper, chopped (optional)
2 tbsp minced garlic or 1 ½ tsp garlic powder
2 15 oz cans diced tomatoes
1 16 oz can tomato sauce
2 6 oz cans tomato paste
1 ½ tsp dried basil, crumbled
1 ½ tsp dried oregano, crumbled
¼ tsp dried thyme
½ tsp dried parsley
½ tsp red pepper flakes
1 tsp salt
¼ tsp freshly ground black pepper
1 ½ tsp sugar
1 tsp red wine vinegar
1 cup chicken broth or water

Spaghetti:
8 oz thin spaghetti noodles
dash of salt

Green Salad (or use a bag salad from the store):
Romaine hearts
Roma tomatoes
English cucumber
Mexican blend shredded cheese
Bacon crumbles
Black olives
Dressing of choice
