Classic Meatloaf:
1 medium carrot, chopped (½ cup)
1 rib celery, chopped (½ cup)
1⁄2 medium onion, chopped (½ cup)
1⁄2 medium red bell pepper, chopped (½ cup)
4 oz white mushrooms, coarsely chopped (¼ cup) (I use canned)
4 cloves garlic, minced (1 tsp garlic powder)
1 lb ground beef (85/15)
1 lb ground pork (or turkey or chicken or lamb)
1 tbsp Worcestershire sauce
1 large egg (2 medium), beaten
1 tsp dried Italian seasoning
2 tsp table salt
1 tsp ground black pepper
1⁄4 tsp cayenne pepper
1 cup plain bread crumbs (I use Panko)
Glaze:
1 tbsp brown sugar
2 tbsp ketchup
2 tbsp Dijon mustard
1 tsp Sriracha sauce, or to taste
Baked Potatoes:
Russet or Yukon Gold potatoes
Butter, sour cream, shredded cheese, bacon crumbles
Salt and pepper to taste
Baja Corn:
1 16 oz bag frozen Baja mix corn
3 tbsp butter
Ms. Dash seasoning
