Happy Thanksgiving! Add this incredible, healthy, simple pumpkin dish to your Thanksgiving menu! In the season of pumpkin, learn how to make this fabulous pkhali (vegan delight!), which is a modern take on the traditional Georgian pkhali dishes. The pkhali dishes are the hallmark of Georgian cuisine. For this dish, the pumpkin is baked (but can be boiled), mashed and mixed with fried onion, walnut paste, and a handful of Georgian spices. The tender, sweeter flesh of pumpkin is a great base for walnut sauce. Balance its sweetness with vinegar (or lemon juice) and touch of cilantro if you wish. I sometimes stir in dried barberries that add sourness to the pumpkin base. Place the barberries in a bowl and pour boiling water to cover. They will plump up and soften in 2-3 minutes. Strain the barberries and discard the water. Stir into the pumpkin base together with other ingredients. Or use unsweetened dried cranberries too. Yummy and healthy!
You can use any kind of pumpkin for this dish.
Ingredients for the Pumpkin Pkhali
Serves 5-6
~2.5 pounds/1kg pumpkin (bake until very tender @350F/180C ~50-60 minutes. It is done when a fork goes into the flesh easily.)
4 tablespoons vegetable oil
1 medium onion
3.5 oz/100g shelled walnuts, halves and pieces ~ 1 cup
2 garlic cloves, peeled
1 teaspoon each: ground marigold, coriander, Blue Fenugreek
1/4 (or to taste) teaspoon cayenne
2 to 4 (or to taste) tablespoons white wine vinegar
1/2 cup/20g finely chopped cilantro (optional)
1/3 cup/60g pomegranate seeds to garnish
Salt to taste and black pepper to taste
