SHRIMP FRIED RICE
INGREDIENTS:
Olive oil 3 tbsp, divided
Shrimp
Shrimp 12 oz
Salt ¼ tsp
Lemon juice 2 tbsp
Corn starch 1 tsp
Onion powder ½ tsp
White pepper ½ tsp
Garlic powder ½ tsp
Scrambled Eggs
Eggs 2
Salt ¼ tsp
Black pepper ¼ tsp
Fried Rice
Peas 1½ cup
Carrot 1½ cup
Garlic 2 cloves
Purple cabbage 1½ cup (plus extra for garnish)
White rice, cooked 5 cups
Salt 1 tsp
Crushed red pepper ½ tsp
Soy sauce 2 tbsp
White vinegar 4 tsp
Black pepper ½ tsp
Sesame oil 1 tbsp
Green onions 1 cup (plus extra for garnish)
PREPARATION:
Note: Before you begin, boil 2 cup rice and set it aside. This should make 5 cups of cooked rice.
1. In a medium bowl, combine shrimp, salt, lemon juice, corn starch, onion powder, white pepper and garlic powder. Let marinate for 10 minutes.
2. Beat eggs with salt and pepper. Set aside.
3. In a large pan add oil, shrimp and cook over medium heat for 1-2 minutes per side, or until cooked through and opaque. Remove the shrimp from pan and set aside.
4. Over medium heat, add oil and beaten eggs to the same pan. Break up the eggs with a spatula, cook to scramble, stirring as necessary. Remove to a bowl.
5. Add another tbsp of oil in the same pan. Add peas and carrots. Stir, add garlic, sauté for few seconds. Add purple cabbage and sauté for a minute.
6. Add cooked rice, eggs and shrimp. Add Salt, crushed red pepper, soy sauce, white vinegar and black pepper. Stir to combine. Add sesame oil ,green onions and mix well.
7. Cook until the rice is hot and sizzles. Stirring frequently.
8. Garnish with green onion and purple cabbage.
