MARINARA SAUCE INGREDIENTS:
Olive oil 1 tbsp
Onion (chopped) 1 cup
Garlic 2 cloves
Crushed tomatoes 28 oz can
Black pepper 3/4 tsp
Paprika ½ tsp
Oregano 1½ tsp
Salt 1 tsp or to taste
Sugar ¾ tsp
Fresh basil (chopped) 1 tbsp, plus more to garnish
PREPARATION:
1. Heat oil in a pot over medium heat.
2. Add onion and sauté for a minute or two then add garlic and saute for another minute or until fragrant.
3. Add crushed tomatoes.
4. Stir in black pepper, paprika, oregano, salt and sugar.
5. Reduce heat to a simmer. Cover and cook for 15 minutes.
6. Stir in fresh chopped basil, cover and remove from the heat.
CHICKEN INGREDIENTS:
Chicken breasts large 2 (halved lengthwise to make 4 fillets)
All purpose flour 1/2 cup
Garlic powder 1/2 tsp
Black pepper 1/2 tsp
Salt 1/2 tsp
Eggs 2 (season with salt and pepper)
Seasoned bread crumbs 1/2 cup
Panko bread crumbs 1 cup
Parmesan cheese 1/2 cup, plus more for serving
Fresh parsley 2 tbsp divided, plus more to garnish
Olive oil for frying
Mozzarella cheese 1 & 1/2 cup shredded
PREPARATION:
1. Cut the chicken breasts in half lengthwise to make 4 thin breasts.
2. In a shallow dish, stir together flour, garlic powder, salt and pepper.
3. In a second dish, whisk 2 eggs. Season with salt and pepper.
4. In a third shallow dish, stir together seasoned bread crumbs, panko bread crumbs, parmesan cheese and fresh parsley.
5. Coat the chicken, both sides first in flour, gently shake off excess then dip in beaten eggs, let the excess drip off and then dip in bread crumbs, gently pressing to coat completely.
6. Heat the oil over medium heat. Add the chicken and fry 3-4 mins each side until golden brown and crispy. Repeat the process with remaining chicken.
7. Preheat oven to 430°F or 220°C.
8. Pour marinara sauce into a casserole baking dish. Place the fried chicken breasts over sauce. Top each breast with 2-3 tablespoons of marinara sauce then cover with shredded mozzarella cheese. Sprinkle with parsley.
9. Bake for 15-20 mins, or until the cheese is melted and bubbling, and the chicken is completely cooked through.
10. Garnish with freshly chopped parsley, basil or extra parmesan if desired.
