In this video, I am making a "Summer Layered Sago with Shredded Coconut" or widely known as "Kuih Sago Lapis" in Malaysia & Indonesia. This is one of my favourite Kuih (steamed cake) recipe that my mom and I picked up from the Baba Nyonya origins in Malacca and mixed it using my own idea. The "Summer" in the title indicates to the colours that I have chosen to implement in this recipe.
Please refer to the list of ingredients that I used for this irresistibly yummy & colourful Kuih Sago Lapis/ Summer Layered Sago Cake.
INGREDIENTS:
Layered Kuih Sago with shredded coconut
Ingredients:
3 cups sago
1 1/2 cup sugar
2 tbsp pandan juice
2 drop pink food colouring
2 drops of orange food colouring
2 drops of yellow food colouring
1 1/2 cup shreded coconut
1 cup thick coconut milk
Other Ingredients:
1 1/2cup shredded coconut
1/4tsp fine salt
2 pandan leaves
Soak the sago pearls in a generous amount of water and leave aside for 1hour. It will increase into double to triple in volume. Drain away excess water then mix with mentioned ingredients in the recipe as per video.
