Trying @CookingConClaudia’s Chicken Tinga Recipe
Ingredients:
• 2 lbs chicken breast
• 1 whole onion
• 1 head of lettuce
• 2 garlic cloves
• 4 Roma tomatoes
• 7 oz can chipotle chiles in adobo
• 1–2 tbsp Knorr chicken bouillon
• Crema Mexicana
• Queso fresco
• 2 bay leaves
• Salt & pepper
• Guerrero tostadas (yellow label)

Step 1: Prep
Start by chopping your vegetables.
Cut one onion in half — one half for the broth, the other half sliced into strips for later.
Shred your lettuce and peel the garlic cloves.

Step 2: Chicken Broth
Bring a pot of water to a boil on high heat.
Season with salt and pepper, then add one bay leaf.
Add the chicken breast and let it cook for about 25 minutes.
Once the chicken is fully cooked, add the 4 Roma tomatoes directly into the pot and let them cook for 5 minutes.

Step 3: Chicken Tinga Sauce
In a blender, add:
• 1 garlic clove
• The entire can of chipotle chiles in adobo
• 1–2 tablespoons chicken bouillon
• The cooked Roma tomatoes
• Half of the onion from the broth
• 1–2 cups of chicken broth
Blend until smooth.

Step 4: Shred the Chicken
Remove the chicken from the broth and shred it. Set aside.

Step 5: Sauté the Onion
In a pan, sauté the remaining sliced onion until soft and translucent.

Step 6: Build the Sauce
Pour the blended sauce into the pan with the onions and mix well.

Step 7: Add Flavor
Add the second bay leaf and let it simmer for about 2 minutes to deepen the flavor.
Remove and discard the bay leaf.

Step 8: Combine
Add the shredded chicken to the sauce and mix until all the chicken is evenly coated.

Step 9: Plating Station
Plating order:
1. Tostada
2. Crema Mexicana
3. Chicken tinga
4. Shredded lettuce
5. Queso fresco
Grab a tostada, spread the crema, add the chicken tinga, top with lettuce and queso fresco.
