Meat Lovers Keto Cottage Cheese Protein Bake
Ingredients
Base
1½ cups full-fat cottage cheese (4%)
2 large eggs
1 additional egg yolk
¼ cup heavy cream
Cheese
¾ cup shredded whole-milk mozzarella
½ cup freshly grated sharp cheddar
¼ cup finely grated Parmesan
Meats
½ cup cooked Italian or breakfast sausage, browned and drained
¼ cup cooked bacon, chopped
¼ cup pepperoni, quartered
Dry Ingredients & Seasoning
2 tablespoons almond flour
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika
Salt and black pepper, to taste
Optional (pizza flavor)
1–2 tablespoons low-carb marinara or tomato paste thinned with olive oil
Instructions
Preheat oven to 375°F (190°C) and grease an 8×8 baking dish.
Add the cottage cheese, eggs, egg yolk, and heavy cream to a blender. Blend until completely smooth.
In a large bowl, mix the blended mixture with the mozzarella, cheddar, Parmesan, almond flour, garlic powder, onion powder, smoked paprika, salt, and pepper until just combined.
Fold in the sausage, bacon, and pepperoni, distributing evenly.
Let the mixture rest for 5 minutes.
Pour into the prepared baking dish and smooth the top. Lightly spoon marinara over the surface if using.
Bake uncovered for 30–35 minutes, until set around the edges with a slight jiggle in the center.
Broil for 1–2 minutes until lightly browned and bubbly.
Remove from the oven and let rest for 10 minutes before slicing.
Notes
The center should jiggle slightly when done — it will finish setting as it rests.
This reheats well and holds together after cooling.
