This is a delicious and easy-to-make veggie and quinoa pan-fried fritter recipe. This is a great dish for those looking for a nutritious and tasty meal that's also vegan. These fritters are made with quinoa, zucchini, onion, carrot, garlic, and a few other simple ingredients. They come together quickly and can be served with a variety of dipping sauces or eaten alone.
Ingredients:
• 1 cup cooked quinoa
• 1 cup grated zucchini
• 1/2 cup grated carrots
• 1/4 cup Shallot
• 1/4 cup Diced bell pepper
• 3 Stalks Chopped Green Onion
• 2 cloves Finely chopped garlic
• 2 tbsp Chopped cilantro
• 1/2 cup Corn
• 1/3 cup all-purpose flour
• 2 Eggs
• 2 tablespoons chopped fresh parsley
• 1 teaspoon baking powder
• 1 teaspoon salt
• 1 teaspoon white pepper
• 2 tbsp Soy Sauce
• 1/4 cup vegetable oil
Instructions:
1. In a large bowl, combine all of the ingredients. Mix well.
2. Heat oil in a large skillet over medium-high heat.
3. Scoop about 1/4 cup of quinoa mixture into the skillet and flatten slightly with the back of a spoon. Repeat with the remaining quinoa mixture, working in batches if necessary.
4. Cook fritters on each side until golden brown and cooked through, about 3-4 minutes per side.
5. Transfer to continue a plate lined with paper towels and serve warm. Enjoy!
6. Alternatively, the patties can be cooked in an air-fryer
