INGREDIENTS
• 400 grams Boneless Chicken Thighs
• 500 grams Potato
• 1 cup Green Peas (Fresh or Frozen)
• 1 tsp Ginger (Minced)
• 1 tsp Lemon Juice
• ½ tsp Salt
• 1 tsp Cumin Powder
• 1 tsp Garam Masala
• ½ tsp Ground Fennel
• 20 - 30 Large Sheets of Spring or Egg Wraps
• ½ tsp Ground Chili powder
• ½ tsp Turmeric Powder
• 2 Cloves garlic (Minced)
• ½ cup Shallot (Finely chopped)
• Avocado oil cooking spray
• 2 tbsp Avocado Oil
• 1 tbsp Cornstarch
• 1 tbsp Water
INSTRUCTIONS
• Peel and dice the potato into bite-sized pieces (approximately 1/4 inch cube). Boil the potatoes in a pot until fork-tender but not mushy. Place them in a bowl of cold water to prevent overcooking.
• Dice chicken thighs into bite-sized pieces (approx. 1/4 inch cube).
• In a pan or wok, add 2 tablespoons of cooking oil and cook the chicken until they are done over medium-high heat. Remove it from the pan or wok and set it aside.
• Using the same pan or wok, add chopped shallot and minced ginger and stir for a minute.
• Add minced garlic, cumin, turmeric, garam masala, fennel, and ground chili and stir for 30 seconds.
• Add chicken, potatoes, and green peas.
• Season with salt
• Mix thoroughly until the seasoning is well incorporated.
• Turn off the heat and add lemon juice. Mix gently.
• Allow the filling to cool to room temperature.
• For the glue, combine in a small bowl cornstarch and water. Mix well.
• Cut a sheet of spring or egg rolls into a triangle. Use one of the sheets to make a cone. Fill the cone with ~2 tablespoons of the fillings and press down with your finger to push it inside the cone. Apply cornstarch mixture on both the other edges. Bring the edges together and seal them by pinching off the edges together.
• Spray the samosas with avocado oil.
• Air fry at 350°F for 20 minutes or until golden brown, flipping halfway.
