🍠 Sweet Potato Holige Recipe
📝 Ingredients
For stuffing (Hoorna):
Sweet potato – 2 large (boiled & mashed)
Jaggery –1 cup cup (adjust to taste)
Cardamom powder – ½ tsp
Ghee – 1 tsp
For dough (Kanikai):
Maida / All-purpose flour – 1 cup
Salt – a pinch
Oil – 2 tsp
Water – as required (to make soft dough)
For cooking:
Ghee – as needed
👩🍳 Method
1️⃣ Prepare the Dough
In a bowl, add maida, turmeric, salt and oil.
Add water little by little and make a very soft dough.
Cover and rest for 2–3 hours (important for soft holige).
2️⃣ Prepare the Stuffing
Heat a pan, add ghee and mashed sweet potato.
Add jaggery and cook on low flame till it melts and thickens.
Add cardamom powder and coconut.
Cook till mixture leaves the pan.
Cool and make lemon-sized balls.
3️⃣ Make Holige
Take a portion of dough, flatten it.
Place stuffing ball inside and seal gently.
Dust with flour and roll softly into thin circles.
4️⃣ Cook
Heat tawa on medium flame.
Cook holige on both sides till golden spots appear.
Apply ghee on both sides.
🌸 Serving Suggestion
Serve hot with ghee or milk 🧈🥛
Tastes best during festivals or special meals.
💡 Tips
Dough must be very soft for soft holige.
