Mangaluru Buns with Veg Kurma & Coconut Chutney – Recipe
Mangaluru Buns (Sweet Banana Poori)
Ingredients:
2 ripe bananas
2 cups maida
2 tbsp sugar
1/2 tsp cumin seeds
1/2 tsp carrom seeds
A pinch of salt
1/4 tsp baking soda
2 tbsp curd
Oil for deep frying
Method:
Mash bananas smoothly.
Add sugar, salt, cumin seeds, baking soda, and curd.
Mix in maida to form a soft dough.
Cover and rest for 6–8 hours or overnight.
Divide into balls, roll slightly thick.
Deep fry in 5 aside.
Veg Kurma
Ingredients:
Mixed vegetables (potato, carrot, beans, flower peas) – 2 cups
Onion – 1 large (sliced)
Tomato – 1 medium
Ginger-garlic paste – 1 tsp or (Raw ginger and Garlic (1:2)
Oil – 2 tbsp
Salt to taste
For grinding:
Coconut – 1/2 cup
Cashews – 8–10
Green chillies – 2
Fennel seeds – 1 tsp
Poppy seeds – 1 tsp
Method:
Heat oil, sauté onions, and green chillies and ginger Garlic,till golden.
Add ginger-garlic paste & tomatoes, cook well.
Add vegetables, salt & water. Cook till soft.
Add ground paste, simmer for 5–7 mins.
Garnish with coriander.
Coconut Chutney
Ingredients:
Fresh coconut – 1 cup
Green chillies – 1–2
Ginger – small piece
Tamarind -1tsp
Roasted chana dal – 2 tbsp
Roasted peanuts -2tsp
Salt to taste
Method:
Grind all ingredients with water to smooth chutney.
Optional tempering with chana dal,urad dal,mustard seeds, jeera, hing & curry leaves and dry red chilli
