This is one of the healthiest and beneficial vegetables in South Indian cuisine. Got so many varieties of leafy, green vegetables. The common term in Tamil is "Keerai". This Amaranth which in Tamil is called "Mulai Keerai". This has to be cooked when the leaves are at its youngest and most tender stage. The other variety is "Snake Gourd" Fry. Snake gourd has to be cleaned of its pulp inside. The exterior has to be scraped clean and washed before slicing it in semicircular thin slices. Then mix it with salt and remove the released water before stir frying. Enjoy !!!!!

Recipe :
Ingredients :-

Vegetables ( Greens or Snake gourd ) , Both same recipe with different vegetable.
Oil - 1 tsp
Urid dal - 1/2 tsp
Mustard - 1/2 tsp
Onion - 1
D. chili - 4 -5 cut pcs.
Salt to taste
Wash vegetables and slice it or cut it.
Snake gourd scrape the outer skin and remove the pulp, wash and slice it semi circular. Add salt and set it aside a few mins.
Then remove the released water before stir frying.
Heat oil and add in the urid dal and mustard seeds.
Once browned add in the d.chili and then the sliced onions.
Stir until translucent.
Then add in the vegetable or greens and cover to cook.
For greens , sprinkle some water and cover a few mins. until cooked. Remove before color changes and serve hot with rice and curry.
For snake gourd option to add in some carrot slices to give an extra taste. Remove it once done with crunchiness and serve it hot with rice and curry.
