Even through I don't have a homestead or a garden or a pantry and I've never home canned anything in my life, I've join the 2024 Three Rivers Challenge hosted by @threerivershomestead

In this video, you’ll #cookwithme and see one of my favorite #pantrychallengemeals - out of this world vegan breakfast burritos - using a recipe from @theeburgerdude and a killer vegan cheese sauce from The Modern Proper’s blog.

Join me in saving money, avoiding food waste, and gaining new life skills. Have a good laugh every week as I stumble through the challenge. Share the highs and the lows with me. It's bound to be a bumpy ride.

I deviated from the above recipe by using 2 cups of Ripple milk (pea protein milk) and 2 cups of water (instead of 5), and by adding 2 bananas, 1 tsp. cinnamon, 2 tbsp ground flaxseed and 2 tbsp maple syrup to the Instant Pot. I also added 2 tbsp hempseed to my bowl to bump up the protein.
