During Week 1 of the Three Rivers Pantry Challenge, I made Chicken Gnocchi Pot Pie, a Mexican skillet, banging breakfast potatoes to go into my vegan tofu scramble breakfast burritos, and a scrumptious chocolate high protein yogurt dessert. I also learned how to adapt to missing pantry items, and how to effectively use some new provisions.

Chicken Gnocchi Pot Pie
1/2 onion, diced
2 cloves garlic, minced
3 tbsp butter
1/4C flour
4C chicken broth
2 tsp each; thyme, rosemary, pepper, parsley
1 tsp each; salt, onion powder, garlic powder
(2) 12oz packs gnocchi
1 rotisserie Chicken, meat removed
2C frozen peas and carrots
2 handfuls spinach leaves *optional
1C half and half
6oz parmesan cheese shredded
1.Saute onions and garlic in butter
2.whisk in flour, then chicken broth slowly
3.add dry seasonings, chicken, & gnocchi - bring to simmer- 5 minutes
4.add remaining ingredients, cover with lid and simmer on low 10 minutes
