PREPARATION:
Madeira Island Espetada is a traditional Portuguese dish that consists of skewered beef marinated in a flavorful mixture and grilled to perfection. Here's a recipe to help you make Madeira Island Espetada at home:

Ingredients:
2 pounds (900g) beef sirloin or rump steak
1/2 cup olive oil
1/4 cup red wine vinegar
4 garlic cloves, minced
2 bay leaves
1 tablespoon sweet paprika
1 teaspoon salt
1/2 teaspoon black pepper
Wooden skewers

Instructions:
1. Cut the beef into cubes, approximately 1-2 inches in size. Place the beef cubes in a large mixing bowl.
2. In a separate bowl, combine the olive oil, red wine vinegar, minced garlic, bay leaves, sweet paprika, salt, and black pepper. Stir well to create a marinade.
3. Pour the marinade over the beef cubes, making sure they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, but preferably overnight, to allow the flavors to develop.
4. Before grilling, soak the wooden skewers in water for about 30 minutes. This will prevent them from burning on the grill.
5. Preheat your grill to medium-high heat.
6. Remove the beef cubes from the marinade and thread them onto the wooden skewers, leaving a small space between each cube.
7. Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally to ensure even cooking. The cooking time may vary depending on the thickness of the beef cubes and your desired level of doneness. Aim for medium-rare to medium for tender and juicy results.
8. Once the beef is cooked to your liking, remove the skewers from the grill and let them rest for a few minutes.
9. Serve the Madeira Island Espetada hot, typically with a side of traditional Madeiran cornbread or a fresh salad.
