Lisa makes a lightened-up version of Vietnamese Bun Cha - using ground chicken instead of the traditional pork. They are gluten-free, low-fat and low carb. Serving suggestions are also presented.
Ingredients:
1 Lb. ground chicken breast
2 Tbsp. grated fresh ginger
1/4 cup chopped scallions
2 Tbsp. fish sauce
3 Tbsp. light soy sauce
1/4 cup almond flour
1/4 cup coconut flour
salt and pepper
Combine all ingredients and form into small patties. Pan-saute for about 3-4 minutes on each side in a small amount of avocado or olive oil.
1 Serving (approx 3 meatballs)
