From my ℝ𝕖𝕔𝕚𝕡𝕖𝕤 𝕗𝕠𝕣 𝔻𝕒𝕕𝕕𝕪, who started cooking at 72 years old and inspires this space, I present you today mi version of the Muhammara, or Roasted Red Pepper Dip.

INGREDIENTS:
Red Pepper ... three medium sized.
Toasted Breadcrumbs ... 65 gr.
Toasted Walnuts ... 100 gr.
Garlic ... 1 clove.
Extra Virgin Olive Oil ... two tablespoons.
Pomegranate Syrup ... one tablespoon.
Tahini (sesame seed paste) ... two tablespoons.
Cumin ... one and a half teaspoon.
Paprika ... to taste.
Cayenne ... to taste. (Careful, It's SPICY!)
Black Pepper ... to taste.
Salt ... to taste.
Fresh Peppermint To Decorate.
PREPARATION
1. Roast the red peppers until the skin is black everywhere. You can roast them in your barbecue or oven, at 200ºC, turning them halfway through cooking. Once they are ready, let them to cool down, peel them and discard the core and seeds.
2. Toast the walnuts in a frying pan with a splash of olive oil until golden.
3. Toast the breadcrumbs in a frying pan carefully. Remember to use fresh breadcrumbs.
4. Blend the ingredients altogether, incorporating olive oil.
And we are ready to serve this delicious version of the Muhammara, or Roasted Red Pepper Dip, decorate with fresh peppermint leaves and walnuts, hydrate with extra virgin olive oil and enjoy!!
