🔹In French, it's called a Guimauve and in English, it's called a marshmallow♪
The difference is that in English, egg whites are used, while in French, they are not.
The fluffy, squishy texture is fun, but if you look at the amount of sugar used in the making process, you'll be like, ‘Whoa!
So this time, I made it with a lot less sweetness, using only honey instead of sugar.
Because no sugar is used, the texture is different from the original, but I think you'll still enjoy the chewy, squishy, fresh-like sensation.

When honey is heated, the enzymes and other active ingredients are destroyed, but I didn't think about that this time and used it as a sweetener (it was a bit of a waste...).
I wonder if agave syrup would also be okay. If anyone tries it, please let me know!

It uses few ingredients and there is no oil such as butter, so it's easy to clean up afterwards. There are also few steps, so please give it a try!

Ingredients
・250g frozen strawberries
・100g honey
・21g gelatine
・cornstarch (as needed)

How to make
① Soak the gelatine in ice water
② Cook the thawed frozen strawberry jam until it becomes a jam-like consistency, mashing it as you go.
③ Put the strawberries and honey from step ① into a bowl and stir well.
④ Squeeze the gelatine to drain off the water, then put it into the bowl from step ③ and mix with a mixer until it becomes white and thick.
⑤ Pour the mixture into a container or tray lined with baking paper and leave in the fridge for at least an hour to set.
⑥ Sprinkle some cornstarch onto a cutting board or similar surface, and remove the mousse from the container.
⑦Cut the gummies into bite-sized pieces, dusting the gummies and knife with cornstarch as you go.
⑧Dust the cut gummies with cornstarch and you're done!

【Point】
・If you don't dust the gummies with cornstarch, they will stick together!
・If you are using fresh strawberries, they will not have any moisture when you heat them, so try the following methods.
①Freeze the strawberries first (same as in this video)
②Heat the fresh strawberries in the microwave to make them.
③Authentic method
Add the same amount of sugar as strawberries and boil down (if you add about 25% of the amount of water syrup as strawberries, it will be even more authentic)
Example: Strawberries 200g
Sugar 200g
Water syrup 50g
Gelatin 20g

🔹Homemade soap

I made it by extracting the extract of the fir tree in my garden into oil.
