Savor the Calm / A Slow Day with Vegan Curry

This is a curry dish that even vegans can enjoy.
I made a curry that doesn't use oil, flour, sugar or dairy products.
The curry is made by steaming the vegetables whole before cooking them,
which concentrates the flavour of the vegetables and makes it very tasty!
Ingredients
3 potatoes
1 carrot
2 eggplants
2 onions
2 tomatoes
3 cloves of garlic
200g chickpeas (pre-cooked)
300ml almond milk
1 tbsp peanut butter
1 tbsp grated ginger
3 tbsp curry powder
1 tsp cinnamon powder
1 tbsp garam masala
(Adjust the amount of spices to your taste)
【Cooking tips】
Steam all the vegetables except the tomatoes until they are soft.
It's better to use whole vegetables if you can.
In the video, I tear the vegetables into small pieces by hand,
but this makes it easier for the flavours to blend together.
Of course, you can also cut them with a knife.
The vegetables are already soft,
so you don't need to cook them for very long,
but it's better to leave them to stand for a while after you've added them all together
so that they blend together and become delicious.

⭐️Carrot salad without oil
This is a carrot salad I made as a side dish.
I used homemade persimmon vinegar that I made in autumn.
The mustard is also homemade, made with mustard seeds and persimmon vinegar.
Ingredients
1 carrot
1 tsp salt
1 tsp homemade persimmon vinegar (or vinegar or lemon juice)
Homemade mustard - about 1 teaspoon
Honey - about 1 teaspoon
If you are a vegan, please use your favourite sweetener such as agave syrup
