Ingredients for 4:
2 Tablespoons of Vegetable Oil
1 Large or 2 medium onions (Red or white), finely chopped (Approx. 300g)
½ Teaspoon of salt (optional but helps the onion cookery process)
4 Cloves garlic, minced / finely chopped (Approx. 15g)
3cm / 1-inch piece fresh ginger, grated
2 Tablespoons tomato paste
2 Tablespoons of Priya’s Vindaloo Spice Blend mixed into a paste with oil a splash of water (derbydave.shop)
4 Boneless, skinless chicken breasts, cut into chunks (approx. 600g)%
1 Cup of chicken stock or warm water
1 400g tin of chopped tomatoes
2 Large potatoes, peeled and diced
4-6 Green Finger Chilles (Optional although traditionally added)
1 Tablespoon white vinegar (or apple cider vinegar)
1 Teaspoon of Garam Masala
2 Teaspoon of Methi/Fenugreek Leaf
Salt to taste
Sugar/honey to taste (optional)
To finish the dish: Garnish with fresh coriander and a wedge of lemon or lime.
