Ingredients for 2 servings: In Order
• 4 Tablespoons of vegetable oil or Ghee
• 1 Tablespoon of garlic, minced or finely chopped
• 1 Tablespoon of ginger, minced, finely chopped or grated
• 1 Large or 2 medium white or red onions (approx. 300g), finely diced
• ½ Teaspoon of salt to aid onion cookery
• 5 Teaspoons Priya’s Chicken Bhuna Spice Blend (derbydave.shop)
• If needed during cooking, add a Splash of warm water to help prevent the spices
from sticking to the pan and burning
• 4 large fresh ripe tomatoes blended (approx. 500g)
• Chicken - use your preferred cut of chicken
• 2 Medium sized chicken breasts cut into bite sized piece, or,
• 4 chicken thighs and 6 chicken drumsticks, ideally bone in and skin on for extra
flavour. You can remove the skin after cooking).
• Warm water as required to adjust the consistency of the gravy to your liking
• Salt to taste
• Optional: 2 Teaspoons of Sugar or Honey (or to taste)
• Optional: 2 Tablespoons of chopped coriander
• To finish the dish: Plate up and drizzle with a little yogurt or cream, garnish
with fresh chopped coriander and serve with Basmati rice and warm chapatis.

• 1 Teaspoon of salt to aid onion cookery
