3 MINUTE CHICKEN CHOW MEIN 三分钟鸡肉炒面
Stir fry with your favorite meat and vegetables. You family and friends will give you lots of compliments when make this simple and tasty noodle dish. It's one of my favorite noodle dishes.
16 oz. package 3 Minute Chow Mein Noodles
3 to 4 oz. pre-cooked chicken or other meat
1 tablespoon chopped ginger
1 tablespoon chopped garlic
3 tablespoons cooking oil
1/2 cup sliced onions
1/2 to 1 cup frozen vegetables
1/2 to cup chicken broth (or use water)
1 to 2 tablespoons light soy sauce
1 to 2 tablespoons Chinese oyster sauce
1 to 2 tablespoons dark soy sauce (optional)
1/2 teaspoon or less Himalayan pink salt or other salt
STEP 1:
Cut and smash ginger and garlic cloves.Prepare and cut up vegetables, such as onions. Bring out frozen vegetables or prepare fresh vegetables.
STEP 2:
In a pot, bring 3 to 4 cups water to a boil. For these 3 minute noodles, I use 4 nests of dry noodles. Add chow mein noodles and boil for 5 minutes, or according to instructions on the package. Remove noodles and rinse in cold water to stop cooking noodles and rinse off excess starches.
STEP 3:
Preheat a wok or pan at medium heat. Add cooking oil, then chopped ginger and garlic. Briefly stir fry. Turn heat setting to medium high. Add onions and briefly stir fry.
Add noodles into the wok. Sear the noodles for 1 to 2 minutes if you like. For crispier noodles, sear noodles longer and flip over several times. Total cooking time is increased, but well worth the extra effort.
Add frozen or fresh vegetables. Add chicken broth or water. Add light soy sauce, Chinese oyster sauce and salt. Stir fry or toss noodes to coat noodles.
Give the noodles a final stir fry. Serve the noodles on a large serving plate or in a large bowl. Enjoy!
