This dish says summer! There is no cooking involved (well, except for the pasta). I am posting a recipe, however, amounts are approximate because you must use fresh ingredients, and produce can vary widely. Taste as you go to adjust seasoning and spices then.... Enjoy!
Summer Sauce
(serves 2-3)
10 ounces of spaghetti or linguine
1 pound of vine ripe tomatoes (any variety)
1 to 2 cloves of garlic
1/2 cup of fresh basil, torn or chopped
1/2 cup of fresh flat leaf Italian parsley
Extra virgin olive oil
salt to taste
Crushed red pepper (optional)
Boil a large pot of water, add salt to taste. Drop the pasta, and cook to al dente.
In a food processor or blender, chop the garlic, then add tomatoes cut to one inch pieces. With the processor running, add olive oil and salt to taste. Turn the processor off, add the herbs, and run processor for just a second or two to mix ingredients.
Toss some of the sauce with the pasta. Serve immediately with extra sauce on the side.
Additionally; this can be served with room temp fresh mozzarella or grated Pecorino Romano.
To refresh the sauce just puree a little more tomato, olive oil, some basil, and a pinch of salt.
